|3 cups scalded milk||1/4 cup water|
|2 Teaspoons yeast||1/2 cup honey|
|1/4 cup oil||8 to 9 cups flour|
Scald milk by bringing it almost to a boil. Let it cool and add honey. Dissolve the yeast in 1/4 cup warm water and mix with the milk and honey and half of the flour. This is the sponge. Beat it for a minuet or so and put in a warm place for an hour. When bubbly, add oil, salt and remaining flour. Knead. Let rise until double-about an hour. The bread should be covered with a damp cloth when rising. Knead again and form two loaves. Place in greased pans and let rise for half an hour. slit the tops of the loaves. Bake at 350 for one hour. This bread is great with butter when still warm from the oven. Makes two loaves.
